Protein muffins make for a great snack or “on the go” breakfast. Keep one with you in your gym bag or purse to make sure you eat every 3 hours. Don’t wait until you are famished before you eat-chances are you will ingest more calories and eat unhealthy.

Banana Protein Muffins
1 Whole Organic Egg
3/4 Cup Organic Egg Whites
2 Ripe Organic Bananas-Mashed
1 1/2 Cups of Uncooked PLAIN Oatmeal (Quick Oats)
2 Scoops Vanilla Protein Powder
1 Tablespoon Cinnamon
1 Teaspoon of Banana Extract
1 Tablespoon Organic Agave Syrup (optional)
1/4 Cup Organic Chopped Walnuts (optional)
1 Tsp Baking Powder
Mix dry and wet ingredients separately. Combine in a large mixing bowl. Spoon batter into greased 12-muffin baking tin. Make sure to wipe off excess cooking spray.
Bake at 350* for approxamately 17 minutes. Check with toothpick to make sure they are cooked all the way through. Try not to overbake.
To ensure freshness, wrap each muffin individually in plastic wrap and store in the refrigerator.
