Ohhh yum! Another great HEALTHY protein muffin recipe! These are hearty Maple Walnut Muffins with cinnamon and raisins in them too! (Add-ins optional of course!) They have healthy fat, slow digesting carbohydrates AND protein in them making them a great complete snack or breakfast. When they are baking your house will fill up with the sweet aroma of Maple! YUM!
Since I am pregnant I use all organic and natural ingredients-meaning no artificial sweeteners (which you shouldn’t be using ANYWAY).
Here’s the recipe and I hope you enjoy these as much as we do!
Ingredients:
1 Cup of Apple Sauce
1 1/4 Cup Egg Whites
1 Whole Egg
1 Tbsp Maple Agave
1 Tsp Maple Extract
½ Cup Quick Oats
¼ Cup Ground Flaxseed
¼ Cup Almond Meal
½ Cup Healthy Flour (I use ¼ Buckwheat Flour and ¼ Cup Brown Rice Flour)
¾ Cup Vanilla or Plain Protein Powder
¼ Cup Chopped Walnuts
½ Cup Raisins
2 Tbsp Cinnamon
2 Tsp Baking Powder
12 Jumbo Foil Muffin Tray Liners
Directions:
Preheat oven to 350*.
Place foil liners in muffin tray.
Mix wet ingredients together and dry ingredients separately. Mix the 2 together.
Add in walnuts and raisins and mix well.
Spoon equal amount in each muffin tin and bake for approximately 28 minutes.
Check with a toothpick and make sure tops of muffins are cooked before removing from the oven.
Let cool for 15 minutes then peel off liners and place on a cooing rack.
Eat fresh or freeze. Either way, store in the refrigerator to keep freshness!
